On the Blackstone
Burger Sauce Ingredients
- Ketchup (½ cups)
- Mustard (½ cups)
- Mayonnaise (¾ cups)
- Worcestershire sauce (2 tsp)
- Kosher salt to taste
- Black pepper to taste
Make burger sauce
In a small bowl combine all ingredients. Use a whisk to mix thoroughly.
Caramelized Onions Ingredients
- Yellow onions (3 pounds)
- Vegetable oil (2 tbsp)
- Salt (¾ tsp)
- Water (¾ cup)
- Baking soda (¼ tsp)
- Water (1 tsp)
Camelize the onions
Trim roots off onions, slice in half, and then radial cut into slices
Crank heat to high, bring water to a boil
Cover and cook until most of the water is evaporated (about 10 minutes). Onions will have collapsed by quite a bit
Press onions into sides and bottom of skillet, don’t touch for 30 seconds, stir up fond, and repeat until onions are uniformly browned, soft, and slightly sticky (about 15-20 minutes).
Stir together remaining water and baking soda in small bowl
Add baking soda mixture and cook until it evaporates
Burger Ingredients
- 75/25 ground beef (5 oz)
- Black pepper (1 tsp)
- Kosher salt (1 tsp)
- American cheese (1 slice)
- Bacon (2 slices)
- Hamburger bun (1 bun)
Instructions
Preheat your grill or skillet to medium-high heat.
Weigh your portion of ground beef and shape it into a 3 oz ball.
Using a heavy spatula, smash the patty onto the Blackstone (or into a seasoned castiron pan).
Season patty with salt and pepper.
When the patty develops a crust, use the back side of the spatula to run under the patty and pull it apart from the pan.
Cook for 3-4 minutes per side or until they reach your desired level of doneness. During the last minute of cooking, add a slice of cheese to the patty and let it melt.
Assemble: Spread the sauce on the bottom half of each bun. Add a patty with melted cheese on top. Finish with the top half of the bun.
